Broccoli, Tomato, Bacon Frittata Bites


To kick off our Whole 30, I made these frittata bites.  These are great for breakfast on the go or for a mid-day snack.  You can use the base recipe for the frittata and use any combination of veggies you’d like.  To reduce waste and make life easier, use leftover veggies in here or use the leftover veggies from this recipe for tomorrow’s dinner.

Banana Date Muffins

These muffins are a true guilt-free, gluten free, tasty treat! They use chickpeas and almond flour in place of regular flour and use very ripe bananas, dates and a little bit of honey, instead of sugar.  These muffins are super moist.  However, don’t be alarmed if they do not rise the same way a traditional muffin rises.

Chocolate Banana Muffins

While I try to keep my family on a low sugar/clean diet, on occasion my kids will ask for a baked sweet treat for breakfast.  I’ve made various paleo muffins and they have been hit or miss (many misses due to the hints of coconut).  I decided to make these chocolate banana muffins with a couple substitutions that fulfill the need for sweet while reducing the use of refined sugar.  In place of regular sugar, I used very ripe bananas and raw coconut crystals, which have a low glycemic index.  The outcome was a hit with the whole family.  No one was able to taste a hint of coconut.
