Whole 30 – Day 28 Super Bowl LI

Fun fact: The first and last time I did the Whole 30, it was during the super bowl and this time is no different.  Coincidence? ….or maybe there is something about starting a reset/detox after the new year.  Either way, since Steve joined me this round and the Super Bowl is like a Holiday for him, I decided to do a Football food themed Whole 30 compliant menu.  When I realized how many people would be joining, I did add a couple of non-compliant items because …well let’s just say you can’t have a Super Bowl party without pigs in a blanket.  🙂 Despite not being able to drink a cold beer or a nice glass of wine, I’m going to go out on a limb and say the Whole 30 Compliant food was a success (even if the cocktail wienies were one of the first things to go)!

Day 28 & Super Bowl Menu

Breakfast: Chorizo sun-dried tomato frittatas

Lunch: Leftover veggies and chicken zucchini balls

Dinner: A little bit of all the Whole 30 compliant Super Bowl Food (see menu)

Gym: 1 hour Zumba

Super Bowl LI Menu 

Whole 30 Compliant

  • Air-fried Buffalo Wings (Seasoned with salt, pepper, paprika, garlic and onion powder and tossed with Tessemae’s buffalo sauce)
  • Buffalo Cauliflower Bites (2 heads of cauliflower, chopped, dipped in a mixture of 1c water, 1c arrowroot, 1/4c coconut flour, couple dashes of cayenne, 1t sea salt, 1t garlic powder and baked at 450F for 30 min.  Tossed with Tessemae’s buffalo sauce)
  • Carrots and Celery with Homemade Ranch (1c Tessemae’s mayo, 1/2c coconut cream, 2T fresh dill, 2T fresh chives, 3T fresh parsley, 3 cloves garlic minced, 3t lemon juice, 1t onion powder, 1t garlic powder, salt, pepper to taste)
  • Pulled Pork (5lb pork shoulder seasoned with 1T sea salt, stuffed with sliced garlic, placed over 2 slices of bacon, and slow cooked for 10 hours on low)
  • Pina Colada Slaw (combined 3/4c coconut milk, 3/4c pineapple juice, 2t apple cider vinegar, 1/2t sea salt and added it to a large bowl with 10c of shredded green and red cabbage, 1c pineapple chunks, 1/2c coconut chips.  Garnished with sliced almonds and coconut chips)
  • Tostone Chips and Air-fried Sweet Potato Chips (lightly seasoned with salt and melted coconut oil, air-fried in several small batches to optimize crispiness)
  • Salsa and Homemade Guac (Pureed the following in the vitamix: 4 avocados, 1 tomato, 3T fresh cilantro, juice of 1 lime, 1 clove of garlic, 1/2t sea salt)
  • Taco stuffed Mini Bell Peppers (used Taco Tuesday recipe for beef filling)
  • Cocoa Spiced Almonds (boiled down the juice of 1 orange, added 1T ghee, removed from heat and mixed in 2t cocoa powder, 1/2t cinnamon, 1/2t sea salt, 1/8t cayenne) with 1.5c raw almonds and baked at 350 for 10 min on non-stick foil
  • Fruit Salad (mango, pineapple, honeydew melon, cantaloupe)
  • Dates wrapped in Bacon [ended up omitting but thought they might be a cute substitution for the pigs in a blanket 😉 ]

Not Whole 30

  • Cheese stuffed Mini Bell Peppers (5oz feta, 8oz cream cheese, 4T chopped chives, 3 cloves garlic (minced), 1T evoo, salt and pepper to taste and a dash of crushed red pepper)
  • Four Cheese Baked Rigatoni (this will need to be a separate post in the future as I’m too tired and this is a favorite)
  • Pigs in a Blanket (mini turkey dogs in crescent rolls baked at 375 for 15 min)
  • Slider Rolls for the Pulled Pork
