Our Favorite Meatza

I made a lot of extra vegetables on the side but this portion was good for 2 adults and 2 kids

Ingredients:

  • 1.5 lb ground beef
  • 1t sea salt
  • 1/2t black pepper
  • 1t garlic powder
  • 1t oregano
  • Optional: dash of crushed red pepper
  • evoo/coconut oil for pan
  • 1.5-2c grape or cherry tomatoes

Optional toppings: steamed broccoli, sautéed mushrooms, sautéed sliced bell peppers

Directions:

  • Preheat oven to 400F
  • Prepare optional toppings as desired while oven is heating
  • In a small bowl, mix all the seasonings
  • In a small/med size skillet on low/med heat, add evoo
  • Add tomatoes to the skillet and sprinkle some of the seasoning mixture (~1/4 of the seasoning), stirring to incorporate (note: tomatoes may pop and should, so it’s best not to wear white or at least cover up with an apron)
  •  As the tomatoes cook and begin to pop, mix the beef with the remaining seasoning mixture
  • Divide the beef in half and pat each half down into a pie plate (if you don’t have two pie plates, use a larger vessel and flatten the beef as much as you can)
  • Bake the beef for 10-15 min
  • While the beef is cooking, blend the tomatoes with an immersion blender or gently pour into a vitamix/blender for smooth consistency
  • Remove the beef from the oven and drain
  • Add tomato sauce and optional toppings
  • Return to the oven for 5 min
  • Remove, slice each pie into quarters and enjoy!
