Whole 30 – Day 23

Day 23

Breakfast: 1 egg, 2 breakfast sausage patties and a sweet potato latke

Lunch: Rotisserie chicken with salbitxada sauce, carrots from the chicken stock I made, plantain chips and strawberry/blueberry/blackberry medley

Dinner: Used the chicken stock to make two different soups: cream-less asparagus soup and chicken spinach soup (just added leftover shredded chicken, fresh spinach, and 4 peeled and sliced carrots).  Also made one of my favorites (despite the fact that it takes me back to my long overtime dinner days at work)… Macadamia nut roasted chicken over lettuce, mango, grape tomatoes, and avocado with a balsamic vinegarette.
