Curry Chicken Salad with Apples


  • 2 thick chicken breast cutlets
  • 1-2t curry powder
  • salt and pepper to taste
  • 1/4-1/2c mayonnaise (homemade or tessemaes)
  • 1 large apple or two small apples, peeled and cubed


  • Boil chicken for 20-25 min (until cooked through)
  • Remove chicken from water and shred chicken
  • In a separate bowl, combine curry powder, salt, pepper, mayonnaise
  • Add mixture to chicken and stir
  • Stir in apples and serve
  • Goes great in a red bell pepper cup or butter lettuce (pictured and topped with pea shoots)
