Collard greens and Bacon

collards-baconBacon truly does make everything better! If there was a healthy way to “put that $%^& on everything,” I would! 🙂

In trying to put some variety into our leafy greens, I decided to use collard greens instead of my go-to’s (spinach, kale etc).  My kids go with the weather when it comes to eating leafy greens and many times it just comes down to how I prepare it.  Enter bacon. My favorite success story is getting my non-brussels sprouts loving husband and son to like brussels sprouts by roasting them with bacon and garlic.  Now they eat it all the time.

Ingredients:

  • 4-5 strips of bacon (paleo friendly bacon found at fairway and whole foods), chopped if desired
  • 1/2 c onion, chopped
  • 2 bunches collard greens, thick stem removed, chopped into ribbons
  • pinch black pepper

Directions:

  • In a medium sauté pan on medium heat, add bacon
  • Once bacon browns on both sides, add onion and stir for a min
  • Add kale and black pepper, stirring to combine
  • Add 1/4c water to the pan and place a lid on it
  • Once the collards have wilted, remove from heat and serve
