Baked Cod with Mango Avocado Salsa and Roasted Asparagus

I usually serve this dish with flour tortillas to make tacos for my kids/guests (and myself when I’m not doing a Whole 30).

Baked Cod with Mango Avocado Salsa

Ingredients:

  • 2lb cod fillets
  • 1t cumin
  • 2t oregano
  • salt & pepper to taste
  • Juice of 1 lemon

For the Salsa:

  • 2-3 avocados, pitted and diced
  • 2 mangos, cut into small cubes
  • Juice of 1 lime
  • Optional ingredients: tomato, jalapeno, and/or fresh cilantro

Directions:

  • Preheat oven to 400F
  • Add the fish to a rimmed baking sheet lined with non-stick foil
  • Pat the seasoning and lemon juice over the filets
  • Bake the fish for 20-25 min or desired doneness
  • While the fish is baking, make the salsa by mixing all the ingredients.

Roasted Asparagus

Ingredients:

  • 1lb thin asparagus
  • 1-2T EVOO
  • garlic powder, salt and pepper to taste

Directions:

  • Preheat oven to 400F
  • Place asparagus in baking dish
  • Drizzle EVOO and sprinkle seasoning
  • Toss to coat
  • Bake for 20-25 min
