Cream-less Asparagus Soup

This is such a simple soup recipe, it can easily be made on a weeknight. It was a nice change of pace from my other go-to soups and was enjoyed by everyone.  My 4 year old even asked for seconds and not just because I told the kids it was Ninja Turtle Ooze Soup.

Ingredients:

  • 1T evoo
  • 2 leeks, white and light green parts only, thoroughly washed and sliced
  • 16oz to 24oz thin asparagus, tough ends removed and roughly chopped, reserving the tips for garnish
  • 1 russet potato, peeled and cubed
  • 4-5 cups homemade chicken stock
  • salt and pepper to taste
  • ~1t lemon juice

Directions:

  • In a stockpot on med heat, add evoo and leeks and stir (~4-5min)
  • Add the potato and asparagus and stir (5 min)
  • Add the stock, salt and pepper and bring to a boil
  • Cook until potatoes are tender
  • While the soup is cooking, heat up a saucepan with about a cup of water and a little bit of lemon juice and bring to a boil
  • Add the asparagus tips to the boiling lemon water and cook for 3 min, drain and set aside
  • Using an immersion blender, puree the soup
  • Add additional salt and pepper to taste
  • Garnish with asparagus tips and enjoy!
