Artichokes (Instant Pot)

I’m still a novice at using my instant pot.  At this point, I’ve only used it to make rice.  The idea of using a pressure cooker is still pretty intimidating.  However, I was in the mood for artichokes and wanted to see how artichokes might come out in the instant pot.  Steve and I were pleasantly surprised.


  • 4 whole artichokes, rinsed
  • 4-5 large cloves of garlic, peeled and sliced
  • handful of fresh parsley, washed
  • salt
  • evoo


  • Prepare the artichokes: remove the stem (you can also peel and reserve the stems), slice off the top inch, peel lingering outer leaves, and snip the points off the remaining exterior leaves
  • Slide a couple slices of garlic into each of the artichokes
  • Sprinkle salt and add drizzle evoo to the top of the cut side of each artichoke
  • Place about 2 cups of water in the instant pot and insert the steaming rack
  • Add salt and parsley to the instant pot
  • Place each artichoke bottom side up
  • Place on steam setting for 8 minutes
  • Depending on the size of your artichokes, you may need to leave them in a little longer
