Pistachio Crusted Salmon

This salmon recipe is a nice change of pace from the traditional lemon and dill or my fav, baked salmon with beurre blanc sauce (which is off limits during my whole 30).

Ingredients:

  • ~2lb salmon, cut into 4 filets
  • 1T Dijon mustard
  • 2T scallion or chives
  • salt and pepper to taste
  • ~1/2c pistachio nutmeats, crushed (I pulsed them in the vitamix)

Directions:

  • Preheat oven to 400F
  • Mix Dijon mustard with scallions, salt and pepper
  • Place salmon on non-stick foil lined baking sheet
  • Spread mustard mixture on salmon
  • Top with crushed pistachios
  • Bake for 18 minutes or until desired doneness
