Slow Cooked Lamb Shoulder

lamb slow cookedAs lamb shoulder can be a bit tough, the slow cooker really helps break it down to become fork tender.

 

Ingredients:

  • 1 onion, quartered
  • 2 cloves garlic, chopped,
  • 3-4 carrots, peeled and sliced
  • 4 – 1 ” thick lamb shoulder chops or 1 lamb shoulder
  • 1/2 t cumin
  • 1/2 t corriander
  • 1t rosemary, chopped
  • 1t fresh thyme
  • salt and pepper, to taste

Directions:

  • Place carrots, onion and garlic in slow cooker
  • Mix all herbs/seasoning together and pat on both sides of the lamb
  • If time allows, brown the lamb in a skillet prior to placing in the slow cooker (otherwise it’s ok to skip this step)
  • Place lamb in slowcooker and cook for 6-8 hours on low depending on the size of the lamb
