I have a go-to chia pudding recipe that I’ve used for a while but was recently introduced to a new one that does not require the use of avocado. I’ve included both versions below.
Chocolate Chia Pudding (without avocado) Ingredients:
- 1/3 c unsweetened cocoa powder
- 1/3 c chia seeds
- 1.5 c almond milk (or coconut milk)
- 1/4 t sea salt
- 2-4 T maple syrup, ~5 pitted dates, or honey to desired sweetness
Chocolate Chia Pudding (with avocado) Ingredients:
- 2 very ripe hass avocados
- 1/3 c unsweetened cocoa powder
- 1/3 c chia seeds
- 1/3 c honey or maple syrup
- 1 T coconut oil
- 1/2 t ground chia seeds
Directions (regardless of version):
- Place all ingredients in a blender and blend until combined
- Cover pudding and place in refrigerator overnight or for several hours until set
Note: I’ve added vanilla and cinnamon to this and found it to over power the chocolate flavor.
