Braised Cabbage with Apples and Bacon

Braised cabbage with apples and bacon is the perfect combo of savory and sweet.  It also adds a good amount of acidity to more bland or drier dishes.

  • 4-5 slices of bacon
  • 1 onion
  • 1 head red cabbage, thinly sliced
  • 2-3 apples, peeled, cored and cubed
  • 3-4T cider vinegar
  • salt and pepper to taste


  • Cook bacon in a large skillet over medium heat until crisp
  • Drain bacon on a paper towel and reserve for other use (such as eating as is) or chop and add back to the skillet once the dish is ready to eat
  • Keep the skillet on and saute the onions in the bacon drippings until soft (if there is an excessive amount of bacon grease, drain some of the drippings)
  • Add the cabbage and chopped apple and cover the skillet (about 8-10 min), stirring as needed
  • Add salt and pepper and stir
  • Continue cooking with lid on, until cabbage wilts (about 5 more minutes) or desired texture is achieved
  • Add chopped bacon (if using) and serve
