Baked Cauliflower Carrot Patties

These “fritters” are very versatile and can easily be made in the oven instead of the frying pan so you can save your oil for another use. ¬†Occasionally I add other shredded veggies such as zucchini or broccoli.

  • 4-5 c water
  • 1 head cauliflower, grated
  • 4 carrots, peeled and grated
  • 1/2 c flour (omit or replace with GF AP flour for gluten free)
  • 1-2 eggs
  • 2T garlic powder
  • 1/2 c pecorino romano
  • 3 scallions, finely chopped
  • salt and pepper to taste


  • Preheat oven to 400 F (skip this step if choosing to fry the patties)
  • In a medium pot, boil water
  • Add cauliflower and carrots and cook for 5 min
  • Drain cauliflower and carrots and add to a large bowl
  • Add all remaining ingredients and mix
  • Once all ingredients are thoroughly blended, form into patties
  • Place on non-stick foil lined baking sheet
  • Cook for 40 min (flipping the patties midway through) or until lightly browned
